intro

this started as an experiment & ended up becoming one of my favorite easy savory treats

ingredients

  • 3 rice paper sheets
  • 1 large egg, beaten + divided
  • ¼ cup crumbled feta
  • ¼ cup shredded mozzarella
  • 1 cup spinach, chopped + sautéed
  • 1 garlic clove, minced + sautéed
  • freshly ground black pepper, to taste
  • pinch of oregano
  • olive oil, for brushing
  • sesame seeds, for topping

let's make it

  1. 01

    preheat oven to 400°F

  2. 02

    mix together the spinach, feta, mozzarella, garlic, oregano, black pepper + half of the beaten egg. set aside

  3. 03

    dip the rice paper sheets in warm water one at a time, then arrange them slightly overlapping

  4. 04

    spoon the filling in a line across the center. fold the rice paper around the filling to form a log, then gently shape into a roll

  5. 05

    brush with the remaining beaten egg + olive oil, then sprinkle with sesame seeds

  6. 06

    bake for ~25 minutes, until golden + crispy & enjoy

notes

  • don't soak the rice paper for too long — just soften it enough to make it pliable.
