crispy smashed Japanese sweet potato rounds served with garlic dill aioli

ingredients

sweet potatoes

  • Japanese sweet potatoes, thinly sliced
  • olive oil
  • flaky salt

garlic-dill aioli

  • 3 tbsp mayonnaise
  • 1 tbsp fresh dill, chopped
  • 1 garlic clove, grated
  • squeeze of fresh lemon juice
  • black pepper, to taste

let's make it

  1. 01

    preheat oven to 400°F

  2. 02

    thinly slice the Japanese sweet potatoes and boil for ~4–5 minutes, until just tender enough to smash

  3. 03

    drain, then gently smash each slice with the bottom of a jar

    spread onto a sheet pan and toss with olive oil + flaky salt

    bake for ~20 minutes, until crispy and golden

    meanwhile, mix together the mayonnaise, dill, garlic, lemon juice, and black pepper

  7. 07

    serve the crispy sweet potatoes with the garlic-dill aioli & enjoy

notes

  • boil them until just tender enough to smash without completely falling apart.
  • give them some space on the sheet pan so the edges can actually crisp up.
