- 2 tbsp olive oil
- 1 yellow onion, diced
- 2 celery stalks, chopped
- 2 carrots, peeled and chopped
- 3 garlic cloves, minced
- 1 bay leaf
- 1 cup brown lentils
- 5½ cups water
- ½ tsp cumin
- ½ tsp coriander
- salt, to taste

let's make it

heat olive oil in a large pot over medium heat. add onion, celery, carrots, and garlic and cook until soft + fragrant, ~5–7 minutes

add the bay leaf, lentils, water, cumin, and coriander. stir to combine
- 03
bring to a boil, then reduce the heat and simmer for 25–30 minutes, until the lentils are tender
- 04
remove the bay leaf, then pulse with an immersion blender for ~3 seconds — just enough to thicken the soup while leaving plenty of texture

season with salt as needed and finish with fresh parsley & enjoy

- — don't go crazy with the immersion blender — a few seconds is all you need.
