carrot ginger soup

let's make it

1. 01

   warm the olive oil in a Dutch oven over medium heat. add the onion, salt + pepper and cook for ~5 minutes, until softened

2. 02

   add the garlic, carrots + ginger and cook for another ~5 minutes

3. 03

   pour in the vegetable broth + water, then add turmeric. bring to a boil, reduce to a simmer and cook for ~30 minutes, until the carrots are very tender

4. 04

   blend with an immersion blender until silky smooth

5. 05

   serve with a swirl of coconut milk
