pls pls PLS don’t mess this one up guys... this is probably my all-time favorite recipe on here & an instant crowd pleaser.

ingredients

1 lb pasta (reserve ~1 cup pasta water)
1 tbsp olive oil
2 shallots, minced
2 garlic cloves, minced
1/4 cup vodka
6 oz tomato paste
1 cup heavy cream
parm, red pepper flakes, salt + pepper (to taste)

let's make it

heat olive oil over medium, then sauté shallots + garlic until translucent (~3 mins)

stir in tomato paste, cook until it darkens (~3 mins)

turn off heat, add vodka, stir until it evaporates, then turn heat back on

mix in pasta water (optional: immersion blend)

stir in heavy cream, then add parm, red pepper flakes, salt + pepper to taste

toss in pasta & enjoy

— don't skip cooking down the tomato paste — letting it darken gives the sauce so much more flavor.
