sungold season might be my favorite season??? this is sweet cherry tomatoes cooked down with shallots + Calabrian peppers, tossed with orecchiette, then finished with dollops of ricotta and lots of parm.

ingredients

12 oz orecchiette, cooked according to package instructions
2 tbsp olive oil
2 shallots, thinly sliced
2 cloves garlic, minced
1 tbsp chopped Calabrian peppers
2 pints cherry tomatoes
½ cup freshly grated Parmesan, plus more for serving
½ cup pasta water
½ cup low-fat ricotta
fresh basil, chopped
salt + black pepper

let's make it

heat olive oil over medium-low heat. add shallots + a pinch of salt and cook until softened (~3 mins). add garlic + Calabrian peppers and cook for another minute

add cherry tomatoes and cook uncovered until very soft, mashing with the back of a spoon throughout (~12 mins)

add 1/4 cup parm and let everything simmer together

toss in pasta and pasta water

top with fresh basil, dollops of ricotta, extra parm, and black pepper
