intro

my sheet-pan gnocchi is a go-to when i want something cozy but quick. everything gets tossed onto one pan, roasted, and topped with lots of parmesan + fresh basil.

ingredients

  • 1 lb gnocchi
  • 2 zucchinis, sliced into half-moons
  • 1 cup grape tomatoes
  • garlic powder
  • oregano
  • salt + black pepper

for serving

  • freshly grated Parmesan
  • fresh basil

let's make it

  1. 01

    preheat oven to 450°F

  2. 02

    add the gnocchi, zucchini, and grape tomatoes to a sheet pan. season with garlic powder, oregano, salt, and black pepper, then toss everything together

    spread everything into an even layer and roast for 15 minutes, until the gnocchi is lightly golden and the vegetables are tender

  4. 04

    top with freshly grated Parmesan and fresh basil & enjoy

notes

  • spread everything out into a single layer so the gnocchi can get golden instead of steaming.
  • no need to boil the gnocchi first — it goes straight onto the sheet pan.
