ingredients

  • 8 oz pappardelle
  • 1 cup pasta water, reserved
  • 1 tbsp oil
  • assorted mushrooms
  • 1 tbsp butter
  • 2 shallots, minced
  • 2 tsp fresh thyme
  • 3 garlic cloves, grated
  • ⅓ cup white wine
  • freshly grated Parmesan, to taste
  • freshly ground black pepper, to taste

let's make it

  1. 01

    bring a pot of salted water to a boil and cook the pappardelle according to package instructions. reserve 1 cup pasta water before draining

  2. 02

    meanwhile, heat oil in a skillet and sauté the mushrooms until deeply browned, ~8 minutes. transfer to a bowl and set aside

  3. 03

    in the pasta pot, melt the butter and cook the shallots until translucent. add the garlic + thyme and cook until fragrant

  4. 04

    pour in the white wine and let it cook down for ~30 seconds

  5. 05

    add the cooked pappardelle, mushrooms + freshly grated Parmesan. toss together, adding reserved pasta water as needed until glossy

  6. 06

    finish with lots of freshly grated Parmesan + black pepper & enjoy

notes

  • don't worry if the sauce looks a little watery at first — it'll cook down + thicken as everything comes together.
