ingredients

  • 2 carrots, peeled + thinly sliced
  • 1 cup broccoli florets
  • ½ red bell pepper, thinly sliced
  • 1 cup shiitake mushrooms, halved
  • 8 oz udon noodles

sauce

  • ½ cup water
  • ¼ cup low-sodium soy sauce
  • 1 tsp honey
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp rice vinegar
  • 1 garlic clove, freshly grated

let's make it

  1. 01

    in a small bowl, whisk together water, soy sauce, honey, sesame oil, cornstarch, rice vinegar + garlic until smooth. set aside

    heat olive oil in a large skillet over medium-high heat. add carrots first, followed by broccoli, red bell pepper + mushrooms, waiting ~1–2 minutes between each addition to allow the vegetables to soften

  3. 03

    meanwhile, prepare the udon noodles according to package instructions. drain and toss lightly with sesame oil to prevent sticking

  4. 04

    pour the sauce over the vegetables and stir until it begins to thicken, then add the udon noodles and toss until evenly coated

    garnish with sesame seeds
