ingredients

  • ¼ cup cocoa powder, plus more for dusting
  • 1 cup espresso
  • 1 tbsp vanilla extract
  • 3 tbsp Kahlúa
  • 5 egg yolks, pasteurized
  • ½ cup granulated sugar
  • ¼ tbsp salt
  • 16 oz mascarpone
  • 24 ladyfingers

let's make it

  1. 01

    whisk together the cocoa powder, espresso, vanilla + Kahlúa. set aside

  2. 02

    in a separate bowl, beat the egg yolks + sugar until pale and thick. add salt + mascarpone and whip until the mixture holds stiff peaks

  3. 03

    dunk each ladyfinger in the espresso mixture for ~2 seconds, then arrange in a single layer in your serving dish

  4. 04

    spread a layer of the mascarpone mixture over the ladyfingers, then dust with cocoa powder

  5. 05

    repeat with a second layer, or a third depending on the size of your dish

  6. 06

    cover + refrigerate overnight

notes

  • don't let the ladyfingers sit in the espresso mixture — a quick ~2-second dunk keeps them from getting too soggy.
