intro
ingredients
- ¼ cup cocoa powder, plus more for dusting
- 1 cup espresso
- 1 tbsp vanilla extract
- 3 tbsp Kahlúa
- 5 egg yolks, pasteurized
- ½ cup granulated sugar
- ¼ tbsp salt
- 16 oz mascarpone
- 24 ladyfingers
let's make it
- 01
whisk together the cocoa powder, espresso, vanilla + Kahlúa. set aside
- 02
in a separate bowl, beat the egg yolks + sugar until pale and thick. add salt + mascarpone and whip until the mixture holds stiff peaks
- 03
dunk each ladyfinger in the espresso mixture for ~2 seconds, then arrange in a single layer in your serving dish
- 04
spread a layer of the mascarpone mixture over the ladyfingers, then dust with cocoa powder
- 05
repeat with a second layer, or a third depending on the size of your dish
- 06
cover + refrigerate overnight
notes
- — don't let the ladyfingers sit in the espresso mixture — a quick ~2-second dunk keeps them from getting too soggy.
