ingredients
- ¼ cup quinoa, cooked according to package instructions
- 2 bell peppers, halved + cored
- 1 garlic clove, minced
- ½ can black beans, drained
- ½ yellow onion, finely diced
- 3 cherry tomatoes, seeded + diced
- ½ cup corn
- 1 tsp cumin
- 1 tsp onion powder
- 1 tsp paprika
- squeeze of fresh lime juice
- salt, to taste
- black pepper, to taste
- Mexican-blend shredded cheese, to taste
let's make it

preheat oven to 375°F and cook the quinoa according to package instructions

halve + core the bell peppers, then place in a baking dish and bake for 10 minutes

meanwhile, sauté the diced onion until softened, then add the garlic and cook until fragrant
- 04
in a pot, combine the cooked quinoa, black beans, sautéed onion + garlic, tomatoes, corn, cumin, onion powder, paprika, lime juice, salt + black pepper

remove the peppers from the oven and divide the filling between each half. top with shredded cheese

return to the oven and bake for another 20 minutes, until the peppers are tender and the cheese is melted
