intro

ingredients

6 oz beef sirloin, brought toward room temperature for ~20 minutes
1 tsp olive oil
1 large russet potato, sliced into thin fries
avocado oil, for frying
flaky sea salt, to taste
freshly ground black pepper, to taste

chimichurri

¼ cup fresh parsley, chopped
1 garlic clove, minced
2 tbsp olive oil
2 tsp fresh lemon juice
½ tsp dried oregano
¼ tsp red pepper flakes
salt + freshly ground black pepper, to taste

let's make it

01
soak the sliced fries in an ice bath for ~20 minutes, then drain and pat very dry
02
mix together parsley, garlic, olive oil, lemon juice, oregano, red pepper flakes, salt + black pepper. set the chimichurri aside
03
heat ~½ inch avocado oil in a skillet over medium-high heat to 350°F. carefully add the potatoes in a single layer and shallow-fry for ~12 minutes, turning occasionally, until golden brown + crispy on all sides. transfer to a paper-towel-lined plate and season immediately with flaky salt
04
pat the sirloin dry and season generously with salt + black pepper on both sides
05
heat 1 tsp olive oil in a skillet over medium-high heat. add the steak and cook for ~3 minutes per side, adjusting for thickness + desired doneness
06
let the steak rest for 5–10 minutes, then slice against the grain
07
plate with the crispy fries and spoon chimichurri over the steak
