sirloin steak frites with crispy homemade fries and fresh chimichurri

ingredients

  • 1. soak the sliced fries in an ice bath for ~20 minutes, then drain and pat very dry
  • 2. mix together parsley, garlic, olive oil, lemon juice, oregano, red pepper flakes, salt + black pepper. set the chimichurri aside
  • 3. heat ~½ inch avocado oil in a skillet over medium-high heat to 350°F. carefully add the potatoes in a single layer and shallow-fry for ~12 minutes, turning occasionally, until golden brown + crispy on all sides. transfer to a paper-towel-lined plate and season immediately with flaky salt
  • 4. pat the sirloin dry and season generously with salt + black pepper on both sides
  • 5. heat 1 tsp olive oil in a skillet over medium-high heat. add the steak and cook for ~3 minutes per side, adjusting for thickness + desired doneness
  • 6. let the steak rest for 5–10 minutes, then slice against the grain
  • 7. plate with the crispy fries and spoon chimichurri over the steak
