- 3. heat ~½ inch avocado oil in a skillet over medium-high heat to 350°F. carefully add the potatoes in a single layer and shallow-fry for ~12 minutes, turning occasionally, until golden brown + crispy on all sides. transfer to a paper-towel-lined plate and season immediately with flaky salt
- 4. pat the sirloin dry and season generously with salt + black pepper on both sides
- 5. heat 1 tsp olive oil in a skillet over medium-high heat. add the steak and cook for ~3 minutes per side, adjusting for thickness + desired doneness
- 6. let the steak rest for 5–10 minutes, then slice against the grain
- 7. plate with the crispy fries and spoon chimichurri over the steak
