cucumber boats filled with spicy sriracha tuna and topped with sesame seeds and green onions

intro

this takes 10 minutes, requires zero cooking, and has been saving me when i need something quick

ingredients

  • 5 oz tuna, drained
  • 1 tbsp mayonnaise
  • 2 tsp sriracha
  • 1 tsp soy sauce
  • 1 green onion, diced
  • 1 English cucumber

for serving

  • sesame seeds
  • green onions, thinly sliced

let's make it

  1. 01

    in a bowl, combine tuna, mayonnaise, sriracha, soy sauce, and green onion. mix and set aside

  2. 02

    cut the cucumber in half lengthwise and scoop out the seeds

  3. 03

    spoon the spicy tuna mixture into the cucumber halves, then slice into pieces

  4. 04

    top with sesame seeds + green onions & enjoy

notes

  • scoop out enough of the cucumber to make room for plenty of tuna, but leave enough around the edges to keep the crunch.
  • best eaten right away while the cucumber is extra crisp.
