intro
udon, honey-soy salmon, and spicy cucumbers aka everything i want in one bowl. the salmon gets pan-seared until caramelized and yes you should absolutely get a little bit of everything in each bite.
ingredients
salmon
- 1 lb salmon, cubed
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 cloves garlic, grated
- 2 tsp sesame oil
- 1 tsp fresh ginger, grated
- 1 tsp rice vinegar
cucumber salad
- 2 Persian cucumbers, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp soy sauce
- 1 tsp honey
- 2 tsp chili oil
bowls
- 16 oz udon noodles
- 2 scallions, thinly sliced
- sesame seeds, for garnish
let's make it

add soy sauce, honey, garlic, sesame oil, ginger, and rice vinegar to the cubed salmon. toss until evenly coated and let marinate while prepping the rest of the ingredients

toss the sliced cucumbers with rice vinegar, soy sauce, honey, and chili oil. set aside

cook the udon noodles according to package instructions, then drain and set aside

heat a skillet over medium-high heat. add the salmon in a single layer and pan-sear until golden and cooked through, turning to caramelize the sides

divide the udon noodles between bowls and top with the salmon and cucumber salad

finish with scallions + sesame seeds & enjoy
notes
- — give the salmon some space in the pan so it actually sears instead of steaming.
- — let the cucumbers sit in the dressing while you make everything else — they only get better.
