  • ⅓ cup coconut oil, melted
  • ½ cup honey
  • 2 large eggs, room temperature
  • 1 cup pumpkin puree
  • ¼ cup coconut milk
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1¾ cups whole wheat flour
  • ⅓ cup oats, plus more for topping
  • semisweet chocolate chips (optional)

let's make it

    preheat oven to 325°F and line a 12-cup muffin tin

    in a large bowl, mix the melted coconut oil + honey until smooth

  3. 03

    add the eggs, pumpkin puree + coconut milk and mix until combined

  4. 04

    add cinnamon, nutmeg, baking soda, vanilla, whole wheat flour + oats and mix until just combined

    fold in chocolate chips, if using

    divide the batter evenly between the muffin cups and sprinkle with additional oats
