mix together ground chicken, onion, garlic, oregano, lemon zest, dill, salt, black pepper, and egg

shape into 12 meatballs, then cook in a nonstick pan for ~10 minutes, turning as needed, until cooked through and the centers reach 165°F

remove the meatballs and set aside. sauté the shallot in the same pan, then add the orzo

pour in the chicken broth and simmer for ~5 minutes, stirring every 30 seconds, until the orzo is cooked and has absorbed most of the broth
