stir fry
- 1 cup uncooked rice, cooked + fully cooled
- 12 oz assorted mushrooms
- green onions, bottoms minced + tops thinly sliced
- 3 large eggs, beaten
sauce
- 2 tbsp soy sauce
- ½ tsp granulated sugar
- freshly ground black pepper, to taste
let's make it

heat a large skillet over medium-high heat. add the mushrooms and cook until deeply golden, then remove from the skillet + set aside
- 02
add the beaten eggs and soft scramble for ~2–3 minutes. remove + set aside with the mushrooms
- 03
sauté the minced bottoms of the green onions until fragrant, then add the cooled rice. break up any clumps and let the rice crisp, stirring occasionally

add the mushrooms + eggs back to the skillet and mix until combined

stir together the soy sauce, sugar + black pepper, then pour over the fried rice and toss until evenly coated

top with the sliced green onions
notes
- — fully cooled rice is key here! freshly cooked, warm rice is much more likely to turn soft instead of crisp.
