ingredients

stir fry

  • 1 cup uncooked rice, cooked + fully cooled
  • 12 oz assorted mushrooms
  • green onions, bottoms minced + tops thinly sliced
  • 3 large eggs, beaten

sauce

  • 2 tbsp soy sauce
  • ½ tsp granulated sugar
  • freshly ground black pepper, to taste

let's make it

  1. 01

    heat a large skillet over medium-high heat. add the mushrooms and cook until deeply golden, then remove from the skillet + set aside

  2. 02

    add the beaten eggs and soft scramble for ~2–3 minutes. remove + set aside with the mushrooms

  3. 03

    sauté the minced bottoms of the green onions until fragrant, then add the cooled rice. break up any clumps and let the rice crisp, stirring occasionally

  4. 04

    add the mushrooms + eggs back to the skillet and mix until combined

  5. 05

    stir together the soy sauce, sugar + black pepper, then pour over the fried rice and toss until evenly coated

  6. 06

    top with the sliced green onions

notes

  • fully cooled rice is key here! freshly cooked, warm rice is much more likely to turn soft instead of crisp.
