crust
- 2½ cups all-purpose flour
- 1 tsp salt
- 2 sticks (16 tbsp) cold unsalted butter, cubed
- ½ cup cold water
filling
- 8 medium apples, peeled + thinly sliced
- ½ cup all-purpose flour
- ½ cup granulated sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 2 tsp lemon juice
- pinch of salt
for assembly
- egg wash, for brushing
- vanilla ice cream, for serving
let's make it

in a large bowl, mix together flour + salt for the pie crust
- 02
add the cold cubed butter and use two butter knives or your fingers to work it into the flour until the mixture is crumbly with pebble-sized pieces of butter

gradually add the cold water, mixing until the dough just comes together. use your hands to form it into a ball

divide the dough into 2 equal halves, wrap + refrigerate for at least 1 hour

while the dough chills, add apples, flour, sugar, cinnamon, nutmeg, lemon juice + salt to a Dutch oven. mix, then cook over medium-low heat for ~15 minutes, stirring occasionally. remove from heat and let cool slightly

preheat oven to 400°F

roll out one half of the chilled dough and fit it into a pie dish for the bottom crust

spoon the apple filling into the prepared crust

roll out the second half of the dough and arrange over the filling. seal + crimp the edges and cut a few vents in the top

lightly brush the crust with egg wash

bake at 400°F for ~50 minutes, until the crust is deeply golden and the filling is bubbling

let cool before slicing, then serve with vanilla ice cream
