ingredients

  • 1 pack ramen noodles, cooked according to package instructions
  • 1 egg
  • 2 pieces extra-firm tofu, scored
  • 1/4 cup corn
  • 1 carrot, thinly sliced
  • 2 pieces bok choy
  • 1 tbsp olive oil

miso broth

  • 1 tsp sesame oil
  • 1 garlic clove, grated
  • fresh ginger, grated
  • vegetable broth
  • miso paste

for serving

  • scallions, thinly sliced
  • sesame seeds

let's make it

  1. 01

    bring a small pot of water to a boil. gently lower in the egg and cook for ~7 minutes, then transfer immediately to an ice bath. once cool, peel + halve

  2. 02

    heat oil in a skillet, then add the scored tofu and cook until golden. add the corn, thinly sliced carrots + bok choy and cook until tender

  3. 03

    meanwhile, heat sesame oil in a separate pot. add the grated garlic + ginger and cook until fragrant

  4. 04

    add the vegetable broth + miso paste and whisk until smooth

  5. 05

    transfer the ramen + broth to a bowl and top with the tofu, vegetables, soft-boiled egg, scallions + sesame seeds & enjoy

notes

  • scoring the tofu gives the outside more surface area for all those crispy edges.
