baked garlic dill salmon kebabs with fresh lemon slices

intro

these are one of those dinners that look way fancier than the amount of effort involved. lots of fresh dill, garlic, a little honey, and lemon slices tucked between every piece of salmon.

ingredients

  • 1½ lb salmon, skinned and cut into cubes
  • 1 tbsp olive oil
  • ½ cup fresh dill, chopped
  • 3 cloves garlic, diced
  • 1 tsp honey
  • salt + black pepper
  • 1 lemon
  • wooden skewers

let's make it

  1. 01

    if using wooden skewers, soak them in water for ~30 minutes

  2. 02

    combine salmon, olive oil, dill, garlic, honey, salt, black pepper, and the juice from ½ lemon. toss to coat and let marinate for at least 30 minutes

    preheat oven to 400°F

  4. 04

    assemble the kebabs, placing thin slices of the remaining lemon between the pieces of salmon

    bake for 10–12 minutes, until the salmon is just cooked through

notes

  • cut the salmon into similar-sized cubes so everything cooks evenly.
  • pairs especially well with crispy lemon fingerling potatoes + israeli salad
