ingredients

  • 2 chicken breasts, butterflied and pounded to ¼-inch thickness
  • 1 tbsp olive oil
  • salt + pepper
  • 3 cups arugula
  • 1/4 cup red onion, thinly sliced
  • 1 tbsp capers
  • lemon-dijon vinaigrette
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/2 tsp honey
  • salt + pepper

let's make it

    pat chicken dry, then coat with olive oil and season both sides with salt + pepper

    heat a skillet over medium-high heat. add chicken and cook for ~2–3 mins per side, or until the internal temperature reaches 165°F

    whisk together vinaigrette, then toss with arugula, red onion, and capers

    squeeze fresh lemon over the chicken, then top with the dressed arugula salad
