marinade

1 tsp honey
1 tbsp lime juice
2 tbsp fresh cilantro, chopped

1 tsp cumin

guacamole

3 avocados
juice from 1 lime
¼ cup red onion, diced
⅓ cup cilantro, chopped
1 Roma tomato, diced
1 jalapeño, diced
salt, to taste

let's make it

add honey, lime juice, cilantro, garlic, paprika, cumin, cayenne, salt, pepper + olive oil to a ziplock bag with the chicken. mix until evenly coated, then refrigerate for 30 minutes to 2 hours

while the chicken marinates, mash the avocados with lime juice, then mix in red onion, cilantro, tomato, jalapeño + plenty of salt. set aside

heat 1 tbsp olive oil in a skillet over medium-high heat. add the chicken and let cook undisturbed for ~3 minutes. flip with tongs and cook for another ~2 minutes, or until the internal temperature reaches 165°F. remove from the skillet

add the red onion + bell pepper to the same skillet and sauté for ~5 minutes, until softened and slightly charred

add the chicken back to the skillet and toss everything together

assemble in warm flour tortillas with the chicken, peppers + onions and guacamole. finish with fresh cilantro + a squeeze of lime
